The Whole System, Not Just the Hood
A canopy on its own does very little. Extraction only works when the hood, the ducting, the fan and the make up air are matched to the equipment underneath and to the building it is going into.
We install stainless canopies with filters that can genuinely be removed and cleaned, run ducting on a path that stays accessible for cleaning later, size the fan to the actual duct run rather than to a catalogue figure, and wire the lot.

Make Up Air Is Not Optional
If you pull several thousand litres a second out of a kitchen, the same amount has to get back in. Without a make up air path the extraction fights the building - doors become hard to open, the fan works against a pressure it was never sized for, and the hood stops capturing properly.
Undersized make up air is the single most common fault we find on kitchens installed by someone treating it as a sheet metal job.
Compliance and Council Sign Off
Commercial kitchen extraction has to meet Building Code clause G4 ventilation, plus fire separation wherever ducting passes through a fire rated element. Mechanical ventilation is normally a specified system on the building compliance schedule, which means annual inspection and reporting.
We install to the standard, and because JP Air Con is IQP certified we can also carry out the ongoing inspections for the building warrant of fitness.
Servicing, Filters and Duct Cleaning
Grease builds up in a kitchen duct whatever you do, and grease in a duct is a fire load sitting directly above an open flame. Insurers increasingly want to see evidence the system is being cleaned.
We service the mechanical side - fans, belts, motors, filters and controls - and we will tell you plainly when a duct needs a proper clean rather than a wipe over the filters.
Cafes, Restaurants and Takeaways
We work on everything from a single takeaway fryer canopy through to a full restaurant kitchen. Small sites still need the calculation done properly - a compact kitchen with a char grill can need more extraction than a much larger kitchen running only ovens.
If you are fitting out a new site, bring us in at design stage. Extraction routes are far cheaper to solve on paper than after the ceiling is in.
Commercial Kitchen Exhaust Questions
What Northland cafe, restaurant and commercial kitchen owners ask us.
Usually yes. Installing or altering mechanical ventilation in a commercial building normally requires building consent, and the system then becomes a specified system on the compliance schedule. We will tell you what your particular job needs before you commit to anything.
It has to overhang the cooking equipment far enough to capture the plume rather than letting it roll out into the room, and the extraction rate is calculated from the type and size of the appliances underneath. A char grill or a solid fuel appliance needs far more than an oven of the same footprint.
Almost always one of three things: not enough make up air, a canopy that does not overhang far enough, or a fan that cannot deliver its rated flow against the duct run it has been given. We can measure what the system is actually doing rather than guessing, and tell you which one it is.
Yes. Most servicing and a lot of installation work in an operating kitchen gets done early, late or on a closed day. We will work around your service times.
Yes. Fan wiring, isolators, interlocks and controls are all done by our registered electricians as part of the same job.
